These are two species that have been used extensively for centuries to make soy sauce, miso paste, and other fermented foods. Microbial animal proteins derived from microbial enzymes are similar in quality to those obtained through conventional methods but they provide much more flexibility in terms of how the final product will look like because they do not originate from slaughtered animals (except during the first stage). The technologies developed so far involve extraction with hot water followed by centrifugation steps at low speed which results in an improved yield compared with traditional procedures based on the enzyme.
