Spray-drying is a dehydration process that involves the application of an atomized spray - typically from an air gun, nozzle, or another device. The droplets may be emitted in many patterns and sequences. As with all methods of drying food, it must be done without destroying the quality and flavor of the ingredient being preserved. Spraying achieves this by quickly moving heat to maintain product temperature at 140°F for 15 minutes while removing up to 99% of moisture through evaporation. This method works well on foods such as coffee beans where size reduction can cause clumping when left too long before processing begins, but it does not work well for items like onions that need to remain intact during storage.
One way of producing dehydrated vegetables, fruits, and meats, spray drying employs an atomizer nozzle that turns liquid feedstock into droplets so small they can be suspended in heated gas where rapid evaporation takes place. Spray Dried products have lower water content than vacuum-dried ones but higher levels than freeze-drying procedures due to their quick dehydration process.
Freeze-Dried:
Freeze-drying is a method of preserving food. It was invented in France by Nicolas Appert and has been used for over 200 years to preserve perishable foods such as raw milk, fruit juices, vegetables, soups, stews, and meats without the use of artificial refrigeration. The process consists of removing all water from the product typically via sublimation, quickly deep-freezing it at very low temperatures -60° C and then sealing it into specially designed airtight packages that are later heated briefly before their final storage for retail sale. This technique works well with high-moisture products because the heat will be conducted through less surface area.
Vacuum Dried:
vacuum is created in a chamber, removing the air. The temperature of the product will be lowered to about 40°C for drying with driers such as heat lamps or infrared radiation. This removes moisture from products like fruits and vegetables which can then last much longer without refrigeration or other preservation methods.
Sun-Dried:
Sun-dried food refers to the process of drying the ingredients in direct sunlight. The sun's rays are full-spectrum and heat up moisture from inside out, making it evaporate quickly. This leads to an even distribution of dried ingredients on the surface that ensures they don't stick together or form clumps when stored for long periods of time without compromising their quality.
Hot-air Dried:
Hot-air drying is a technique that uses hot air to remove the moisture from food items. This helps in removing bacteria, mold, and other contaminants as well as stopping any microbial growth. The heat of the dryer also sterilizes each piece of food before it enters containers or bags for storage or shipping purposes.
