Calcium Sulfite is a white crystalline solid. It dissolves in water to form sodium bisulfate and calcium hydroxide, although the solubility of calcium sulfite decreases with an increase in temperature. Industrial Grade Calcium Sulfite:
Industrial Grade Calcium Sulfite can be further divided into calcium sulfate (CaSO) or other inorganic additives such as sodium chloride (NaCl). As a by-product of fertilizers and pesticides, the Industrial grade is used for water treatment. In addition to being an additive agent for paper making process, it also acts as a surfactant for pulp produced from recycled materials. Calcium Sulphite is mainly used in paper mills where it helps break down lignin and allows more pulping chemicals to dissolve in the mix when cooking fibers. It reacts with copper ions at high temperatures which creates a chemical reaction that breaks down cellulose molecules.
Food Grade Calcium Sulfite:
Food Grade Calcium Sulfite is used as a preservative in the food and beverages industry. It can be mixed with salt, sugar, or other additives to create both sweet and sour flavors. Some of the most common industries that use Food Grade calcium sulfites are: tomato sauce & paste production, soy sauce manufacturing, fruit juices (orange juice), and beer brewing. The degree of usage varies depending on the type of business - for example, paper-making mills would largely depend on Industrial grade Calcium Sulphite while breweries will heavily rely on Food Grade products.
In addition to being an additive agent for the beer brewing process, it also acts as a surfactant which allows starch molecules from barley malt extract to dissolve more easily in water. The most common use of Calcium Sulphite is to prevent spoilage and bacterial growth in fresh produce such as vegetables, fruits, and so on. Others:
Product type that falls under the Others includes natural grade sulfites which are produced from processing sulfur dioxide into calcium sulfite salts at high temperature (above 1213°F).
