Edible agar is also called Kanten. Edible agar is obtained by boiling certain sea vegetables, usually red algae. The component that gives these organisms their color is a complex polysaccharide called Agarose which accumulates in the cell walls of the organism as they grow. It dissolves easily when heated and becomes gelatinous at around 50 °C.

Sugar-free agar is made without adding any sugar. It has high nutritional value and no-calorie content, making it a good substitute for people who want to lose weight or avoid diabetes and other health conditions related to refined sugars. Sugar-free agar gives the same texture as regular agar when heated up but can be more expensive than its counterpart because manufacturers have to use additional ingredients in order to achieve the desired consistency while keeping out all excess sugars during the production process.


Sugar agar is made with the addition of sugars like glucose, lactose, and sucrose to nutrient agar. It is used for growing bacteria that ferment sugar (fermentation type organisms). Sugar-free media are useful in testing for enzyme production by microorganisms since most enzymes act upon the added carbohydrate substrates which would not be present if they were absent from the medium.

Edible agar is used in canned meat to retain freshness and give an appealing texture. It enables the production of soft, tender, firm & lightly chewy textures by preventing syneresis (weeping) during storage.
