Curdlan is a natural polymer with similar properties to gelatin. Curdlan has been traditionally used as a food thickener and emulsifier, but it also serves as an important component in pharmaceuticals, such as binding medicine into capsules or syrups.

Gum Curdlan:

Gum Curdlan is a solid gum produced by the fermentation of glycogen. It is obtained from natural sources, such as starch-rich plant material (e.g., corn), seaweed, and sugar beet pulp, or it can be manufactured from dextrin syrup using bacterial enzymes. Gum curdlan belongs to the category known as hydrocolloids which are substances that create water-based colloidal systems with long chains of polysaccharides attached together through hydrogen bonding interactions.


Powder Curdlan:

Powder Curdlan is the most common type of curdlan. It's made by grinding dried, boiled plants called "curdles" into a powder and then heating it at about 300 degrees Fahrenheit. This process turns the powder to gelatin or liquid form in just a few minutes. After cooling down for some time, solid chunks will be formed that are actually tough pieces of protein like those found in meat.

The main advantage of this kind of curdlan over others is its versatility: because you can make it so quickly with boiling water (and without needing any specialized equipment), it can go from being a hot gel to being cooled down as an almost-solid chunk on demand. Plus, since there are no stabilizers in the powder, it will keep for a long time.

The disadvantage is that this kind of curdlan has relatively low-quality protein content compared to other types. But because it's so easy and fast to make with boiling water, you can always add more protein if desired. So while there may not be much meat-like protein, what's there still gives it plenty of versatility as well as decent shelf life.


Liquid Curdlan:

Liquid Curdlan is a product of the organic solvent extraction process. This type of Curdlan has an acidic character and it can be found in crystalline form (liquid) or gel-like consistency (solid). Liquid Curdlan will typically appear clear to almost translucent with slight hazing, which is attributed to impurities like chlorophyll, waxes, pigments, or particulates.

Curdlan is a common polymer found in the cell walls of fungi that have been used for centuries as an ingredient in pharmaceuticals. It's largely obtained from plants but can be extracted from fungus too, such as Polyporus tuberaster which grows on wood or paper mulch.

The use of curdlan as an adjuvant to increase absorption rates and potency was first documented by English physician Thomas Sydenham during the 17th century and since then it has been studied extensively with much success. Various studies have shown its efficacy when added to vaccines against tetanus, diphtheria, polio - all administered orally due to their toxicity- typhoid fever (via injection) botulinum toxin type A (for treating muscle spasms), and HIV (in the treatment of AIDS-related diarrhea). This adjuvant is also used in a variety of intravenous injectable drugs for treating cancer, chronic pain, epilepsy, migraines, and other neurological disorders.



Curdlan is a biopolymer belonging to the thermoplastic group. In food, it can be used in jam and jelly-type applications due to its thickening properties as well as acting as an emulsifier agent (helping fats mix with water).



It can also be used for other applications like cosmetics and vaccines. In addition,d Curdlan can function as a topical treatment option where doctors may prescribe creams containing curdlan on top of wounds that are slow healing. In this case, it will help regenerate tissue cells while protecting them from infection by inhibiting bacteria growth within surrounding tissues.
